In a market where Bahrain's tourist spending reached BD 1.9 billion and rose 23% in two years, an entire category is being given away.

01 Why this is compelling

A category that earns illy nothing today

Twenty percent of a food line that currently generates no revenue, no attention and no strategic value is not a share of illy's existing revenue. It is a line that does not yet exist. There is no cannibalisation argument to have, because the coffee revenue is explicitly excluded and stays entirely with illy.

Growth without opening a single café

Two of the three tiers put the illy name into venues and occasions across the Kingdom without illy signing one additional lease, hiring one additional barista or fitting out one additional counter. The wholesale menu travels with beans you already sell. The events tier needs no illy premises at all.

Bianco takes complete ownership of the food category across illy's Bahrain footprint — cafés, wholesale accounts and events — funds every part of it, and pays illy 20% of all revenue it generates.

What makes this different from a supplier conversation

A supplier sells illy pastry at a price. This is a revenue-share partnership in which the brand is remunerated for the brand, and the operator carries the operation. illy stops buying food and starts earning from it.

Revenue to illy

20% of gross food revenue, rung through your own tills, settled on agreed terms. Coffee and beverage revenue is entirely excluded and remains 100% yours, exactly as it is today.

Bianco produces from a licensed central kitchen that is built, certified and running today — not a facility to be commissioned. Daily output, cold-chain distribution and bake-off and finish-in-venue formats are already in operation.

Bahrain has around 140 hotels and more than 24,000 rooms, with 39 five-star properties and a further twelve in the pipeline. Every one of them buys coffee from somebody. Very few buy it on the strength of the bean alone.

Beans are a small fraction of what a hotel earns from its coffee service. That means a competitor can always undercut you on price — and eventually one will. A signature dessert list they cannot get anywhere else is a reason to stay that price cannot erode.

Revenue to illy

20% of the wholesale menu revenue on every account, on top of the bean revenue you already earn. Same delivery, same relationship, same account manager — a second revenue line for no additional commercial effort.

The cheapest marketing illy has

Every service is a live tasting of illy espresso, poured properly, in front of executives, ministers, procurement heads and hotel managers. It is sampling that generates revenue instead of consuming budget.

It reaches the venues tier two is trying to open, often before any commercial conversation has started. A hotel that has served illy at three conferences is a very different prospect for your sales team than a cold call.

Weddings are the piece most coffee brands never reach. A Bahraini wedding runs 100 to 400 guests on a BHD 20,000 to 35,000 budget, of which venue and catering take 30 to 50%. An illy coffee and dessert station is an affordable, high-visibility line inside that budget — and it puts your brand in front of four hundred people, in their own photographs, on the most-remembered night of their year. No advertising illy could buy in Bahrain reaches that audience in that state of mind.

What the matrix says

There is no cell on this table where illy earns less than it does today, because today this category earns illy nothing. The only question is how large the number becomes — and the answer depends far more on account acquisition, which Future Foods is uniquely placed to drive, than on anything happening inside the existing cafés.

Bianco's 80% has to fund the entire operation that creates it.

  4. Switch on illy Events immediately

    This tier needs nothing from illy but permission to place the name on the station. It can be earning inside the current season, in front of the exact audience your sales team is trying to reach.
